This simple and popular recipe is a tasty way to use up some of those prolific garden zucchinis. What makes it so delicious is the crispy parmesan cheese! Recipe by Robert McPhail
Prep and Cook time: 10-20 minutes
- 1 zucchini
- Shredded parmesan cheese
- Olive oil
- Freshly ground black pepper
Directions
Wash the zucchini and slice into thin medallions.
Heat some olive oil in a large frying pan over medium heat. Once the oil is hot, place the zucchini slices in the pan in a single layer. Fry for about 4 minutes, or until the bottoms are nicely browned.
Flip each zucchini medallion over and sprinkle shredded Parmesan generously over the tops. Continue cooking for another 3-4 minutes, until the Parmesan is melted, brown, and crispy.
Using a flipper, carefully lift the crispy zucchinis out of the pan and place them on a plate. Sprinkle with a little black pepper.
And that’s it! They’re crispy, cheesy, and delicious!
